Regarding the security fixes in Edge 87 I would like to refer to the article Chrome 87 released. In the release notes for Microsoft Edge 87.0.664.41 Microsoft lists the following new features for the new browser:

  • Automatic redirection for incompatible websites from Internet Explorer to Microsoft Edge. Starting with the stable Microsoft Edge 87 update, public Web sites that display an incompatibility message in Internet Explorer are automatically redirected to Microsoft Edge. For more information and to configure this procedure, see Redirecting incompatible sites.

  • Kiosk mode privacy features enabled. Starting with Microsoft Edge version 87, kiosk mode features are enabled to help organizations protect user data. These features enable functions such as deleting user data on exit, deleting downloaded files, and resetting the configured startup experience after a specified idle time. Learn more about configuring Microsoft Edge Kiosk Mode in Configure Microsoft Edge kiosk mode.

  • Shopping functions activated by default. Starting with Microsoft Edge version 87, enterprise users can also benefit from shopping in Edge. With the shopping features, Microsoft Edge helps users find vouchers and lower prices when shopping online. Coupon vouchers are available with this update, and the price comparison will be released in upcoming updates for Microsoft Edge 87. This feature can be configured through the EdgeShoppingAssistantEnabled policy. More information can be found on the Microsoft Blog and on the Microsoft Shopping page.

  • ClickOnce provisioning enabled by default. ClickOnce is enabled by default in Microsoft Edge 87, which reduces the barriers for organizations to deploy software and allows for better customization to the behavior of the Microsoft Edge Legacy Browser. Starting with Microsoft Edge 87, the "Not Configured" status of the ClickOnceEnabled policy reflects the new default status of ClickOnce Enabled (compared to the previous default status of Disabled).

  • The new Business Tab (NTP) integrates productivity with customizable, work-related feed content. The Company NTP combines the Office 365 productivity site, which we offer to users logged in with their work or school account, with personalized, work-related company and industry feeds organized on a single page. Users will be able to see the familiar content of Office 365 and Microsoft Search for Business powered by Bing. In addition, they can easily customize "My Feed" by selecting the most relevant content from the available content and modules for their organization. IT administrators can control the news feed settings for their organization, including the industry selected for the Edge New tab, by going to the Microsoft 365 Administration Center. Learn more.

  • Privacy and security: Support for TLS token binding for policy-configured Web sites. TLS token binding helps prevent token theft attacks to ensure that cookies cannot be reused by a device other than the one on which they were originally set. The use of TLS token binding requires the AllowTokenBindingForUrls policy to be set and requires that the listed Web sites support this feature.

  • Keyboard support for highlighters in PDF files. Users can use their keyboard keys to highlight any text in a PDF file.

  • Print: Select which page to flip when printing on both sides. Users can choose to flip the long or short side of a sheet when printing on both sides. Select the print rasterization mode for the company. Control how Microsoft Edge prints on a non-PostScript printer running Windows. Sometimes print jobs on non-PostScript printers must be rasterized to print correctly. The print options are "Full" and "Fast".

The new guidelines can be found in the Release Notes. The browser should update automatically.
